2 lbs green tomatoes, small dice,
¼ cup sugar
2 bay leaves
1½ tsp ground cumin,
1 tsp ground coriander
1 cinnamon stick
small, black peppercorns
(1) Combine tomatoes and sugar in nonmetal bowl and allow to sit for 15 minutes.
(2) Wrap cinnamon stick and black peppercorns in cheesecloth.
(3) Place sachet in a pot with cumin, coriander, bay leaves, and tomatoes. Cook over medium heat until tomatoes become soft and most of the moisture evaporates.
(4) Season with salt and vinegar to taste.
