You’re burnt out on quarantine cooking. You’re bored of the same old recipes. Heck, maybe you’re even getting sick of the same takeout menu in your neighborhood. You’re in luck—Portland has been ramping up its game with everything from exclusive pop-up ice cream shops to new outdoor patio tables, perfect for socially distanced dining. Even better, bring the patriotic party home with pre-made BBQ grill-kits and premium bottled cocktails. Here’s a handful of places at your service this week just in time for the 4th.

Kate’s Ice Cream

Tucked away in an inner-courtyard along NE Sandy Blvd across from the Zipper, pop-up ice cream shop Kate’s Ice Cream just had its grand opening last weekend. Combining organic coconut and cashew milk into a cool, creamy, 100% plant-based treat right in front of your eyes in the on-site kitchen, owner and founder Kate has the goal of making the best dairy-free ice cream, not just “good for vegan.” My split-scoop of salted peanut butter brittle and marionberry cobbler served on a wafery, gluten-free waffle cone dashed with cinnamon and sea salt made a perfect summer treat. It’s much lighter and curiously much tastier than a lot of other vegan ice creams chock full of additives—I savored every last bite (without waddling away with the usual rather sizable food baby). The scoop and pint shop is open Friday to Sunday from 12–7 pm, now through the end of summer. katesicecream.com

Bantam Tavern

Brought to you by the creators of neighborhood haunts Prost! and Stammtisch, the urban American cocktail bar is inviting visitors to enjoy the sun and a strawberry prosecco spritz on their extra-large parking lot-turned beer garden on NW 21st. Pair it with braised red pork spare ribs, or grab a plate of chili cream cheese crab dip and fried wonton wrappers for the table. They’re open daily, as late as 10pm. bantamtavern.com

Reo’s Ribs

Owned by Snoop Dogg's uncle, Reo Varnado, the eponymous Southern-style BBQ joint offers myriad smoked meats from beef brisket to fried chicken tacos to a whole rack of baby back ribs with a side of skillet corn. Finish it off with a summery sweet peach cobbler or house made sweet potato pie, available for pickup NE 42nd and Sandy. reosribs.com

Le Pigeon’s July 4th Grill Kit for Two

The signature Portland restaurant brings you a grill-ready box of 4th of July favorites. The French-inspired spot's Bird Boxes contain pork chops that can easily be thrown on the grill with sides of apple slaw and gruyere mac & cheese. For the grand finale? Strawberry Angel Food Cake with vanilla mousse and firecracker crunch. Order your box online for pickup on Thursday or Friday of this week on E Burnside. lepigeon.com

Straightaway Cocktail’s Mango Habanero Margarita

After seven years of perfecting the recipe, the bottled cocktail company takes you to straight to Margaritaville in just one “open, pour, and sip.” Straightaway Cocktail’s 50 proof bottled concoction blends Reposado Tequila with Portland Syrup’s locally made agave, mango, and habanero flavors, finished with a touch of fresh lime juice and a sprinkle of Jacobsen’s kosher sea salt. Bottled margs, cocktails, and even hand sanitizer are available for curbside pickup at Straightaway Cocktail’s tasting room on SE Hawthorne, or for delivery throughout Oregon. straightawaycocktails.com
