Nice to 'meat' you, Portland. The Seattle-based butcher shop chain Bill the Butcher has just announced plans for an expansion of as many as 10 shops in PDX. A recent press release declared a partnership between Bill the Butcher founder/owner J'amy Owens and local Portland financier Erick Paulson, of E. Paulson Co. The new deal will bring the butcher shop's sustainable business model, 'gate-to-plate' delivery system, and meat activism to Portland. Presenting a unique brand of shops that are "culturally relevant, socially important and green," Bill the Butcher offers grass-fed beef, pastured pork, and organic chicken free from chemicals, GMOs, and antibiotics.
