Claiming “simple Italian food” as its motto and local, sustainably produced cuisine as the twist, Mingo brings fine dining to Beaverton with passion and simplicity. Though the menu is ever-changing (the kitchen staff is always on the hunt for creative and healthy entrees), a few favorites from predecessor Caffe Mingo, like the penne al sugo di carne and fresh caprese and Mingo salad, tend to stick around.
