After years spent in borrowed kitchens, Nomad.PDX found a home sandwiched between Providore Fine Foods and Tails & Trotters. Visit the main, 25-seat, 10-course dining room for a more casual prix fixe dinner, or take a seat at the chef’s counter and kitchen for a 20-course modern-naturalist odyssey. While you wait—or for a low-commitment taste—sneak into Nomad's shoebox-sized back bar, stocked with a menu of snacks (including a burger layered with Kewpie mayo, smoked shallots, and chicken liver pate) and a short list of cocktails. Climate studies are less complicated than some of the house techniques. (If you’ve never tasted basil chlorophyll, extracted from the leaves, then strained into a sauce the color of an Amazonian jungle, this is the place.)
