Portland is quickly becoming a battleground for Tokyo’s own top noodle soup players, like midsize chain Marukin Ramen, with their first stateside location nestled off of Southeast Broadway. Two ramens rotate daily, from the classic Hakata-style tonkotsu pork to a vegan-tofu-soymilk broth, most holding a modest assemblage of bamboo shoots, green onions, nori, soft-boiled egg, and chashu-roasted pork. So far, Marukin’s signature tonkotsu variety, made with long-simmered Carlton pork, is king with its milky white multidimensional broth. Sides, like garlicky pork dumplings and juicy nuggets of fried karaage, make for solid distractions, but the real showstopper here is what’s in the bowl.
