New Season of Chef Studio Classes

Though the passing of Chef Studio founder Robert Reynolds is a great loss to the Portland culinary community, his legacy and passion for education lives on at the renowned cooking school at 2818 SE Pine. From individual classes to eight-week intensive series, the community of culinary professionals sharing their expertise at Chef Studio are offering a new lineup of classes for all skill-levels...and it's a doozy.
The Chef Studio family offers hands-on instruction through courses, dinners, field trips, and events for first-hand familiarity with new ingredients, techniques, and cooking styles, including:
Pastry with PDX dessert whiz Kristen D. Murray
In this class, Murray offers a "tour of pastries", shaing stories and techniques she's gleaned from trips to France and years of tutalage under Robert Reynolds. Learn to make summer galettes, financiers, pate de fruit, and macarons inspired by the best of the late-summer harvest. These $200 classes will be held on Sundays: September 9th, October 14th, and October 28th.
Indian Cooking Series with Kaaren Bedi
Kaaren Bedi is an expert in Indian cuisine and has been cooking and teaching for nearly a decade. In this series she will take students through street food, Northern Indian home cooking, Southern Indian home cooking, as well as the breads and condiments that tie it all together. These $200 classes are held on Fridays: September 21st, September 28th, and October 5.
A Dutch Oven, A Book, and Ken Forkish
Ken Forkish of Ken’s Artisan Pizza has just published his first book, Flour Water Salt Yeast, and will join the team in The Chef Studio, sharing his classic Dutch Oven Bread recipe as well as the art of making artisanal breads and pizzas (followed by a full dinner). The class will take place on Thursday, September 29th and costs $65.
Putting Food Up with Alton Garcia
Canning Master Alton Garcia has worked in some of Portland’s finest kitchens, and now teaches pickling, canning and preserving to the teams behind local restaurants. In his preserving class, he'll share his secrets behind making Oregon's summer produce last all year long. The $75 classes will be held on Saturdays: September 8th, October 6th, October 27th, and November 10th.
Foraging In The Northwest with Sara Pool
Gardener, landscaper, mushroom hunter, and forager Sara Pool will guide Chef Studio students on exclusive foraging adventures. Starting right here in Portland, moving to Mt Hood and ending on the coast, Sara will walk students through edible flowers, fruit trees, berries, and different edible plants. The $75 tours will be held on Saturdays, September 15th and October 13th.
