Akadi Authentic West African Sauces

“Akadi” means tasty in Bambara (a native language in Cote D’Ivoire). This name represents all of our yummy wholesome recipes made from scratch. Akadi was established in 2017 to represent a side of Africa that had been missing on the diverse food scene of Portland. West African food is unique and deserves to be celebrated fully in all aspects. We offer various dishes from different parts of West Africa such as Ivory Coast, Senegal, Ghana, Mali and Burkina Faso to name a few.

Chef Fatou Ouattara is from Bouake, Cote D’Ivoire, she shares her passion for African cuisine with the city of Portland at Akadipdx, where she created the original Akadi Mild Sauce. Chef Ouattara specializes in West African cuisine and recalls specific recipes she learned from her grandmother while in Bobo Dioulasso, Burkina Faso.

“She showed me how to cook with clay ovens, wood fire and traditional spices made from scratch.” Ouattara recalls her favorite childhood recipe, was a vegetable sauce, and she still loves it because it goes with everything. Ouattara modified this childhood sauce and created Akadi Mild Sauce with local ingredients. These days it is her favorite thing to put it on is burgers and fries.

In 2018, Akadipdx was honored with a feature in Portland Monthly’s, ‘Best New Restaurant Guide!’ Since then they have been featured in Season 18 of Bravo’s Top Chef Portland Edition. Since then Akadipdx has evolved, creating products such as their signature Akadi sauce and vegan dishes now sold throughout Portland. The Akadi sauce is a very versatile sauce it can be added to many recipes in order to elevate the flavors or for some kick.

Akadi sauces can be used as marinades, salad dressings, condiments, dips etc. It can be used in cooking stir frys, bbq’s, fried rice, stews, soups and many more meals. Pair it up with fried plantains, roasted baked African yams, grilled beef strips or whole fried fish, this sauce can be used with anything and everything and as our customers like to say “you can drink it.”

You can now find Akadi Mild and Spicy sauce at your local New Seasons and at all Green Zebra locations! Green Zebra also carries Akadipdx’s signature vegan dishes as well, our Shosho, Spicy Okra Spinach, Veggie Yassa and even Fufu are available in both locations.
