Jake Martin shakes things up at the Fireside, Chinese food enters the brewpub scene, and Stan’wiches offers a deep-fried PB&J on Hawthorne

←Chef Jake Martin, former chef of landmark fine dining eatery Genoa (RIP), has stepped into a new role as the executive chef at the Fireside. He has joined the Fireside’s new bartender Chauncey Roach (who, until recently, crafted cocktails at Ración) at the Westside “outdoor inspired” restaurant with new dishes like heirloom tomatoes with house-made cucumber fromage blanc and cucumber vinegar, crispy duck legs with grilled peaches and spicy greens, and hangar steak with blistered tomatoes and parsley. A Chinese restaurant and a craft brewery under the same roof might sound odd at first, but that’s exactly the vision behind chef Chris Bogart and brewer Nate Yovu’s BTU Brasserie. BTU Brasserie will specialize in classic family-style Chinese fare along with a crisp flagship lager made with Chinese rice. The brewpub is slated to open later this summer in the Rose City Park neighborhood and the owners are making one final push on Kickstarter to fund the remainder of their equipment needs. Although Bar Dobre shut its doors in June, Portlanders can still fill up on plates from chef Stan Pratnicki. Earlier this month, Pratnicki relauched the old Bar Dobre space as casual cafe Stan’wiches. The sandwich spot offers meat-lovers the chance to enjoy savory Porkstrami sandwiches (house-cured pork loin, sauerkraut, gruyere, pickles, and fig-bacon relish) and Cajun-inspired Buttermilk Fried Chicken Stan’wich (chicken, bacon, cheddar, and Cajun aioli.) And with options like a Tempeh Reuben and a deep-fried PB&J (yes, you read that correctly), plant-based eaters aren’t left out in the cold either. Stan’wiches is now open from 12 pm to 7 pm, Monday through Friday, and 12 pm to 5 pm on Saturday and Sunday. 3962 SE Hawthorne Blvd.

Aaron Adams, Chef and co-owner of Portobello Vegan Trattoria, has recently announced his departure from the eastside Italian restaurant. Sous chef Matthew Zita, who has been running the kitchen for the last month to ensure a smooth transition, will take over Adams’ post in the kitchen while Adams’ share of the business has been sold to his partner Dinae Horne. 1125 SE Division St.

A new bar and market is opening on Hawthorne, specializing in specialty beer, wine, and food. The bar, appropriately named Prettyman’s General after historical figure Perry Prettyman who is responsible for paving the road from his house on upper Hawthorne to the Willamette River—a path that would eventually become Hawthorne Blvd. The neighborhood bar is open from 11 am to 11 pm seven days a week.
