In the next few weeks, former Ned Ludd cooks Nicholas Ford and Brandon Gomez will swing open the doors to P.R.E.A.M, their Wu-Tang-fueled pizza party set to open at 2133 SE 11th Ave. While we wait, the duo has dropped a few menu details and dates for their upcoming preview dinners (April 15-18).

The menu, broken down by “intro,” “verse,” “hook” etc., promises high-flavored bites to start (pork belly bruschetta with chicory and black garlic to pork sugo arancini), along with salads, like grilled romaine with smoked mayo and chicken skin. Pizza is the star of course, with their signature kale and smoked mozzarella pie drizzled with honey and a hearty potato number topped with pickled onion and miners lettuce.

Preview dinners will run from April 15-18, 5:30 – 9pm. Reservations required.
