First Look: Rachel’s Ginger Beer Now Open on Hawthorne
As Eat Beat reported earlier this year, Seattle’s cult fizzy drink, Rachel’s Ginger Beer, has made its first move into Portland’s artisan market. Owner Rachel Marshall has a flagship at Pike Place market, a second spot on Capitol Hill, and two dedicated RGB bars in Seattle. Now she's officially opened her first spot outside of Seattle, in the former Peet’s Coffee space at 3646 SE Hawthorne Blvd.
The tart, lemony ginger beer is already flowing freely, with RGB growler fills ranging from pink guava to cucumber x tarragon, plus ice cream floats with Heart Coffee cold brew and soft-serve from Snoqualmie in Washington. Marshall says they hope to have their liquor license ready by Friday, December 2. That means frozen cocktails, like the Tropical Storm (RGB, coconut puree, and white and dark rums) and a hot toddy with heated blood orange RGB and whiskey.
Instead of serving tortas, as originally reported, veteran Seattle chef Monica Dimas is cooking up her Sunset fried chicken sandwiches (join the party!), which hit RGB’s Capitol Hill location last spring. Four options range from the OG, with dill pickles and tangy cabbage slaw, to the GT (as in General Tso), with daikon and cilantro. Two salads and fried snacks like damn good hush puppies spiced with jalapeño, cilantro, and cayenne round out the food list.
Rachel’s Ginger Beer is open daily from 11 a.m.—8 p.m., with plans to stay open until 11 p.m. once the liquor license is secured. Flip through our above slideshow for more.
