As Eat Beat first reported in November, Greg and Gabi Denton, the star chef couple behind Ox and recent winners of James Beard gold, are launching a Parisian bistro. Now, an opening date has been confirmed: January 18. To start, Bistro Agnes will be open for dinner only, 5–10 p.m. Sunday–Thursday and 5–11 p.m. Friday–Saturday. Lunch will follow soon.

The new project takes over the Dentons' former West End Superbite space (527 SW 12th Ave), an experimental small plates and platters concept that folded recently. “We love this old-school French comfort food,” says Greg Denton, “and we can't wait to bring this style of cooking to our downtown neighborhood.”  

A sneak peek at the menu shows a love of classic dishes, executed with small contemporary twists, not wild reinventions. Potential starters that caught my eye: gougères, cassoulet (who doesn’t want to see the Denton’s big-flavored take on a cassoulet?), steak frites, glazed profiteroles, and yes, a gilded "Le Cheeseburger." “The burger is a departure from what we've done in the past,” says Greg Denton, “and we don't think it will disappoint. It's a Frenchier version of the American classic, where it's treated more like chopped steak than a burger. It's a grilled 8-ounce Wagyu beef patty topped with aged cheddar, grilled red onion, and truffled bordelaise sauce on a toasted brioche bun. You're probably going to need a knife and fork for this!”
