Garden Bar's Christopher Handford and Ana Chaud are at it again. The pair have inked two new leases to expand their mini-chain of "farm to go" salad bar restaurants that draw long lunchtime lines at their two current locations, and work continues on the soon-to-open third downtown space.
The first of the latest leases—located at Park Square near SW First Ave. and Market—will open late fall in a newly renovated 8,000-square-foot atrium, and will offer raw cold pressed juices. The second, Hassalo on 8th in the Lloyd District (1061 NE 9th Avenue), will open in Spring 2016. These two cafes join a third location currently in the works in the Postal Building (510 SW Third Ave.) which is set for a late fall debut.
Hanford, the culinary power behind Davis Street Tavern and Jamison, teamed up with Chaud, a local fitness instructor with a passion for health and small businesses, to open the “fast casual” salad-focused restaurant in 2014, with the aim of offering an alternative to supermarket salad bars.
"I don’t think we’ll be totally happy until we have everyone in Portland having at least one of our salads every week. That’s not a lot to ask, is it?" admits Chaud. According to a press release, Garden Bar’s aggressive growth plans call for opening 15 Garden Bar locations in five years.
In other salad bar news, Crisp Salad Bar is now open in the former Kenny & Zukes Deli Bar space on North Williams, offering a dozen signature salads, customizable salads with over 50 add-ins, soups, panini, wraps, house kale chips, and drinks like Brew Dr. kombucha, Jones Soda, Stumptown Cold Brew, as well as beer and wine. The new space at 3901 N Williams Ave invites you to sit and eat a while with 40 seats plus a 24-seat patio.
