Quorn Chilaquile Breakfast Burrito
'On the go' convenient and healthy too, these burritos will inspire a whole new way of eating.

Makes 2-3 burritos
- 2 tablespoons butter or oil
- ½ cup favorite green or red salsa
- 1 cup Quorn Meatless Grounds
- 6 eggs
- large handful of tortilla chips
- ½ cup shredded cheddar cheese
- 2-3 flour tortillas

Melt butter or oil in a large saute pan heated to medium high heat. Add Quorn Meatless Grounds and toss to coat. Add salsa and allow liquid to reduce. Add eggs and turn heat to low. Stir eggs to combine ingredients. Crush tortilla chips and add to eggs. Stir to combine. Add cheese and stir to combine. Heat tortillas on a griddle or directly over flame of gas stove. When eggs are cooked and cheese has melted, place about a cup and a half of egg mixture in the center or tortilla. Fold in sides and roll to close. Burritos can be wrapped and stored in the refrigerator for one to three days and reheated in the microwave.
