Strawberry and Dark Chocolate Pavlova
This delicious, creamy dessert is impressive and easy to make! Make the components well ahead of time, then assemble and serve immediately to impress your favorite Valentine!
Strawberry and Dark Chocolate Pavlova
(Baccone Dolce)
Serves 2-4

4 Simple Truth Organic egg whites (room temperature)
¾ cup Simple Truth Organic Cane Sugar (superfine*)
1 teaspoon corn starch
½ teaspoon apple cider vinegar
1 teaspoon Simple Truth Organic vanilla extract
1 bag Simple Truth Organic Frozen Whole Strawberries, thawed
1 cup Heavy Whipping cream, whipped until stiff
1 cup Simple Truth Organic 72% Cacao Dark Chocolate Chunks
Preheat oven to 350 degrees. Draw two 6-inch circles on parchment paper and place under a silpat liner. Place egg whites in a very clean bowl and beat with hand mixer until frothy. SLOWLY add sugar and continue to beat until glossy. Add corn starch and vinegar and mix to combine. Add vanilla extract and whip again. Meringue should be stiff and very glossy. Pinch a small amount between thumb and forefinger to make sure sugar is completely dissolved. Spoon meringue onto baking sheet making sure to stay within the circles creating a small ledge around the edges. Place meringue in oven and immediately turn oven temperature to 200 degrees. Bake meringue in oven for 60-90 minutes without opening oven door. After 1 hour, check meringues to make sure they are firm on the outside. Turn off oven and open oven door slightly by placing a wooden spoon in the door. Allow meringue to cool completely in the oven.
When ready to serve, place chocolate chunks in a small zip top bag (non-pleated) and microwave until melted (30 second intervals at a time). Place one meringue on serving platter. Snip the end of zip top bag and drizzle with dark chocolate, top with whipped cream and a layer of berries. Place second meringue on top. Layer whipped cream and berries and drizzle with chocolate. Dust with powdered sugar if desired. Serve Immediately.
*To make superfine sugar, place sugar in a food processor or high speed blender and blitz for about 30 seconds.
