Grilled Foster Farms Simply Raised Chicken thighs with Persian Inspired Spice Rub, Pomegranate Molasses and Fresh Herb Salad

All Foster Farms Free Range Chicken with No Antibiotics Ever products are raised in the Northwest and are always allowed access to the outdoors. Foster Farms chickens are raised Free Range on 100% vegetarian diet with no antibiotics ever, no added hormones and no added steroids. Raised locally in the Pacific Northwest, Foster Farms chickens are always delivered fresh, never frozen. For this recipe, boneless, skinless Foster Farms thighs are rubbed with a blend of sweet, smoky and warm spices. After grilling they get a drizzle of homemade pomegranate molasses and are garnished with a combination of chopped fresh herbs for a pleasantly spicy and very unique main dish.
For the spice rub:
2 Tablespoons ground coriander
1 Tablespoons ground Cumin
2 teaspoons ground black pepper
1 teaspoon ground fenugreek leaves
¼ teaspoon ground cloves
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
8 boneless skinless thighs of Foster Farms Free Range Chicken with No Antibiotics Ever
3 Tablespoons olive oil
Kosher salt
16 oz. unsweetened pomegranate juice
2 Tablespoons brown sugar
¼ cup each chopped cilantro, Italian parsley and fresh mint
In a small bowl, blend all spice rub ingredients together and set aside. Salt both sides of Foster Farms Free Range Chicken with No Antibiotics Ever thighs with Kosher salt, then generously rub with spice mixture. Place chicken in a shallow bowl and drizzle with olive oil. Allow chicken to marinate in the spices for at least a couple of hours or up to overnight.
Heat grill to high heat. Place chicken thighs, starting smooth side down, on grill and allow to cook until nice grill marks appear. About 8-10 minutes per side. Turn off one side of grill and place chicken on the “off” side of the grill. Close grill lid and allow chicken to continue to cook for another 20-30 minutes maintaining heat inside the grill at 300-350 degrees.
COOK TO A SAFE INTERNAL TEMPERATURE OF AT LEAST 165°F. ALWAYS use a meat thermometer to determine the temperature. Do not rely solely on suggested cooking times. Cooking appliances vary in temperature and cooking times are a GUIDE ONLY.
Meanwhile, place pomegranate juice in a saucepan with brown sugar. Bring to a boil and continue to boil until juice reduces by three quarters (should take about 20 minutes watching carefully towards the end) Remove from heat and set aside.
Place cooked thighs on a serving platter. Drizzle with pomegranate molasses and garnish with fresh chopped herbs.
