Shrimp Rice Cakes with Spicy Peanut Sauce

Makes 10 Rice Cakes

  • 1 yellow onion, minced
  • 1-2 serrano chiles, minced, seeds included
  • 2-inch piece of ginger, grated
  • 1/2 cup chopped cilantro
  • 1/2 teaspoon cayenne
  • 1 teaspoon turmeric
  • 1 container Minute Cilantro and Lime Jasmine Rice
  • 1 lb wild shrimp, peeled and deveined
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 cup fine dry breadcrumbs
  • 1 cup flavorless oil (canola, vegetable or coconut oil)
  1. Heat two teaspoons of oil in a small non-stick skillet over medium heat. Add onions, chile and ginger and saute until onions begin to turn golden. Add cilantro, turmeric and cayenne and saute for a minute more. Remove from heat.
  2. Place shrimp on a cutting board and chop finely. Add rice to board and continue to chop until combined. Place shrimp and rice in a bowl. Add onion mixture along with eggs and salt. Place breadcrumbs on a piece of wax paper. Scoop mixture and shape into balls. Place ball in bread crumbs and flatten slightly. Carefully turn each patty over and coat other side with breadcrumbs allowing excess to fall. Place patties on a wax paper lined sheet tray and chill for at least 1 hour.
  3. Use a large skillet to heat oil to medium high heat. Oil should reach about 1/2 inch up the bottom and side of pan. When oil is hot but not smoking, carefully place patties into oil and allow to fry until deep golden brown on both sides.

For the peanut sauce:

  • 3/4 cup natural peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 3 tablespoons coconut sugar (or brown sugar)
  • 2 teaspoons sriracha sauce
  • 3 cloves garlic, grated
  • 1 tablespoon ginger, grated
  • 1 tablespoon fresh lime juice
  • 2-4 tablespoons warm water
  1. Place all ingredients into a high-speed blender and blend until smooth.
  2. To serve, place a pool of peanut sauce onto plate. Place Shrimp Rice cakes next to sauce and garnish with fresh greens.
