2 cups packed seeded and chopped Medjool Dates
1 teaspoon baking soda
2 Tablespoons Coconut Oil
2 teaspoons real vanilla extract
½ cup cashew cream
¼ teaspoon kosher salt
Place chopped dates in a medium saucepan and add water just to cover. Bring to a boil, then turn down to a simmer and allow to cook uncovered for 10-15 minutes to soften. Add baking soda to dates and stir to blend. Place dates and all other ingredients into a high-speed blender or food processor and blend on high until very smooth. Store date butter in a jar or other air-tight container in the refrigerator for up to two weeks.
